Jackies Oatmeal Raisin Cookies

My dearest friend and former, neighbor, Jackie loves to make these cookies because they are both flavorful and quite different from your usual oatmeal cookie. She recently treated me to a batch while on a visit from her new home in Butler, to Pittsburgh, and I couldn't keep my hands out of the cookie jar. [well, monor point, there is no cookie jar], but if there were one, that would be the case. You are saying, enough! okay, then, here's the recipe.


3 eggs, beaten
1 cup raisins
1 teaspoon vanilla
1 cup butter, softened
1 cup packed brown sugar
1 cup sugar
2 and 1 half cups flour
1 tsp cinnamon
2 tsp. baking soda
2 cups old fashioned rolled oats
1 cup chopped pecans


in a small bowl, combine eggs, vanilla and raisins.
cover and let stand for one hour.
preheat oven to 350 dg.
in a large bowl, cream butter and sugars together.
sift flour, cinnamon, and baking soda.
add to creamed mixture and stir raisin mixture into dough.
add your oats and nuts.
drop by teaspoonfuls onto an ungreased baking sheet.
bake ten minutes or until lightly browned.
let sit on stove top for five minutes after you take them out of the oven.
