Annie Alperns fresh apple cake

secret to this one is the more tart the apples, the better. Granny Smith are excellent.

Annie Alpern was a very energetic, loving, and kind woman who was my stepdad, Sams, sister inlaw. Although she wasn't actually related to us, many an afternoon, my mom and I would sit and eat this very cake with an endless supply of coffee and conversation.


1 cup oil
1 cup sugar
3 eggs added all at once
2 and one half cups flour
1 tsp. soda
1/2 tsp salt
1 tsp. cinnamon optional
3 cups tart apples


peel and core apples and dice.
combine everything else into a large mixing bowl.
mix with your mixer. add the apples and cinnamon.
bake at 350 a greased baking pan, either 9 by 13 or two loaf pans for forty minutes.
works well in a bundt pan, too.
then, try and keep yourself from eating at least two hunks before putting it away!
